I have an awesome oatmeal cookie recipe to share. These cookies will not disappoint you if you like soft and chewy. And for the heck of it, I threw in a few pictures I took recently. Hope you enjoy both!
Soft & Chewy Oatmeal Cookies
1/2 c. margarine, softened
1/2 c. granulated sugar
1/2 c. brown sugar
1 egg, room temperature
1/2 tsp. vanilla extract
1/2 tsp. baking soda
1/2 tsp. salt
3/4 tsp. cinnamon
1 c. all-purpose flour
1 1/2 c. oatmeal
This recipe does not call for raisins but go ahead and add some if you are so inclined.
Preheat oven to 375 degrees. Line two cookies sheets with parchment paper. Recipe makes 1 dozen large cookies.
In a large bowl, cream margarine, sugars, and egg together. Add vanilla, baking soda, salt, and cinnamon; mix well. Add flour and oats. Stir all ingredients thoroughly. Drop onto cookie sheets with dining sized tablespoon. Bake for 8 – 10 minutes. Watch closely so you do not over bake. Cool on cookie sheet before removing.

Those photos are great. That truck reminds me of my father in law’s 1957 green Chevy truck. It still runs after all these years.
I haven’t made oatmeal cookies in ages. They need to make it only my list.

Soft, chewy oatmeal cookies are one of my favorites. My siblings and I would fight over them fresh out of the oven when we were growing up. Yours look fantastic and I love your photography!
