If you like homemade dinner rolls but don’t like how time-consuming it is to make them, you are going to love this recipe.
Most bread and roll recipes require two risings and most of us don’t have that kind of time until our weekend arrives.
This recipe is going to change all that. Since this recipe only requires one rising it makes it possible to have homemade rolls for dinner any night of the week. And who doesn’t like the smell of warm bread wafting from their kitchen?
Quick Dinner Rolls
2 tbsp. yeast
3 tbsp. sugar
1/4 c. warm water (about 110 degrees)
1 c. milk
1/2 c. heavy cream
1/4 c. butter
1 tsp. salt
1/2 tsp. baking soda
2 c. whole-wheat flour
2 1/4 c. all-purpose flour
In a small bowl, add yeast, sugar, and warm water; set aside.
In a medium saucepan, add milk, heavy cream, and butter. Warm ingredients in saucepan to about 110 degrees.
In a large bowl, add yeast mixture, salt, and baking soda. Alternate adding flours and milk mixture; mixing between each addition. Once ingredients are thoroughly mixed, turn dough onto lightly floured surface. Knead dough until smooth and elastic. Let dough rest for 10 minutes.
Cut dough into pieces that can be formed into approximately 1 1/2 inch balls; place in greased baking pan. Cover with plastic wrap and set in draft free location. Let dough rise for 1 hour, or until doubled.
Bake in 400 degree oven for approximately 16 – 20 minutes. Remove from oven, lightly brush with butter, and cool on a baking rack.
Makes about 15 rolls.
The cream and butter in this recipe gives these rolls a slightly sweet and mild flavor, and their texture is moist and tender.
